Snack-attack Beetroot Hummus

The Lowdown

 

“Why should I eat this?”

 

Hummus is extremely versatile; you can enjoy it in many forms. If you’re a person who struggles to eat veg, then it is a great way to add more veg to your diet.

 

“When should I eat this?”

 

Try roasted red pepper hummus, lemon and coriander hummus or this beetroot hummus. Enjoy in salads, sandwiches, wraps or as a dip with some carrot or celery sticks. The possibilities are endless. If you’re feeling a little peckish and want something to tide you over until lunch or dinner, then look no further than this simple snack.  

 

 

The Showdown 

 

Ingredients

 

  • 2 cloves of garlic.

  • 1 Tablespoon of smooth peanut butter.

  • 2 Tablespoons of olive oil.

  • Salt.

  • 6 balls of beetroot from a vinaigrette.

  • The juice of 1 lemon.

  • 1 Can of chickpeas.

 

Cooking method

 

  1. In a blender, blend 2 cloves of garlic until finely done.

  2. Drain the chickpeas and add, with a tablespoon of peanut butter, the juice of 1 lemon, 2 tablespoons of olive oil, the beetroot, and a pinch of salt.

  3. Blitz until you get a smooth dip.

  4. Enjoy with some carrot or celery sticks, on a salad or in some wraps or sandwiches.
