“Why should I eat this?”
Hummus is extremely versatile; you can enjoy it in many forms. If you’re a person who struggles to eat veg, then it is a great way to add more veg to your diet.
“When should I eat this?”
Try roasted red pepper hummus, lemon and coriander hummus or this beetroot hummus. Enjoy in salads, sandwiches, wraps or as a dip with some carrot or celery sticks. The possibilities are endless. If you’re feeling a little peckish and want something to tide you over until lunch or dinner, then look no further than this simple snack.
2 cloves of garlic.
1 Tablespoon of smooth peanut butter.
2 Tablespoons of olive oil.
6 balls of beetroot from a vinaigrette.
The juice of 1 lemon.
1 Can of chickpeas.
In a blender, blend 2 cloves of garlic until finely done.
Drain the chickpeas and add, with a tablespoon of peanut butter, the juice of 1 lemon, 2 tablespoons of olive oil, the beetroot, and a pinch of salt.
Blitz until you get a smooth dip.
Enjoy with some carrot or celery sticks, on a salad or in some wraps or sandwiches.
