Healthy Chocolate Cinnamon Buns

The Lowdown

 

“Why should I make this?”

 

Just looking at these is more than enough of a reason to make this recipe! Adopting a healthy lifestyle doesn’t mean you can’t indulge in perceived “bad” foods. There are no “bad” foods, just better or worse choices, and, in my eyes, these are certainly a better choice than traditional cinnamon buns.

 

Traditional cinnamon buns are highly processed, full of preservatives, and loaded with fat from butter. These cinnamon buns get their sweetness from coconut sugar, giving a more stable rise in blood glucose in comparison to caster sugar. These treats do still contain a relatively moderate to high amount of calories due to the addition of dark chocolate, however, I believe in combining healthy baking with enjoying yourself. If you aren't enjoying yourself, then how can you enjoy the process to a better lifestyle?

 

“When should I make this?”

 

Anytime! What better way than serving these with Sunday brunch and a cup of coffee, or after a roast dinner this weekend for Easter. Is someone mad at you? Make them these, it will ease the blow.

 

The Showdown 

 

Ingredients

 

  • 2 bars of 85% dark chocolate.

  • 2 eggs and 1 extra egg for an egg wash.

  • 150ml Coconut milk (any milk will do).

  • 160g Coconut sugar.

  • Pinch of salt.

  • Vanilla extract.

  • 1 tablespoon Coconut oil.

  • Cinnamon.

  • 400g Self-raising flour.

 

 

Cooking method

  1. In a bowl, add 400g of self-raising flour with 100g of coconut sugar and salt.

  2. Crack in the two eggs, pour in the milk, add a drop of vanilla extract, and mix until becomes a fine dough.

  3. In a pot, on a low heat, melt 60g of sugar and add in a tablespoon of coconut oil, and a teaspoon of cinnamon.

  4. Roll out the dough into a symmetrical square and spread the cinnamon coconut mix over it evenly.

  5. Break up the dark chocolate into pieces and place over the dough.

  6. Roll the dough over into a cylinder shape.

  7. Cut into 10 even pieces.

  8. Place these pieces side by side in a baking tin.

  9. Whisk one egg and brush over the buns to add a golden touch to the outer part of the buns.

  10. Place into a pre-heated oven at gas mark 4 for 35-40 minutes or until golden on the outside.

  11. Allow to sit and cool once out of the oven before separating.

  12. Pour over any remaining coconut sugar and cinnamon mix pour over the buns and serve.
