Drop Dead Brown Bread Pudding

Nutrition Coach, Darragh Henry, shares his recipe for this drop-dead delicious brown bread pudding!

The Lowdown

“Why should I eat this?”

The ingredients in this recipe are different to most bread and butter puddings. Opting for more natural sugar options will reduce the glycaemic index and the glycaemic load, meaning you won’t get the same spike and drop in blood sugar levels as you would with more conventional caster sugar.

“When should I eat this?”

Impress your partner or friends with this recipe as a healthy brunch alternative, a dessert, or as a snack when feeling peckish. Enjoy it hot or cold, with ice-cream, yogurt or custard; you’re in charge!

The Showdown

Ingredients

250g of dried fruit3 medium ripe bananas1 loaf of fresh brown bread (crunchy on the outside)Coconut milk (any milk will do)250ml of pressed apple juiceAbout 200g of Coconut sugar1 large Granny Smith appleLemon (zest)2 teaspoons of Cinnamon¼ teaspoon of Vanilla extract1 teaspoon of coconut oil

Cooking method

Preheat the oven to gas mark 6.Place apple juice, dried fruit, and chopped granny smith apple into a pan. Bring to the boil and simmer.Place 4 tablespoons of coconut sugar in a dry pan; add a drop of coconut milk, cinnamon and a drop of vanilla extract. It should take about 90 seconds for it all to come together.Place the dried fruit, apple, and apple juice mix into the pan once the caramel has formed.Add half of the brown bread loaf, cut into small cubes, into the mix and add the zest of 1 lemon.Place the mixture in a dish.Mash 3 bananas in a bowl. add the other half of the brown bread, cut into small cubes, and mix.Pour the banana and brown bread mix over and place into the oven for 20 minutes.Once done, serve with yogurt, ice-cream, custard or on its own.
